Oyster school held this week in Apalachicola

Oyster school will be held this week in Apalachicola.

The program, which teaches restaurant chains, seafood buyers and seafood distributors more about shellfish, will be held this Wednesday and Thursday.

Oyster School provides important information about everything from how they are harvested and processed to how to safely handle and store them. Attendees will head out on the bay for a hands-on oyster-tonging demonstration aboard an oyster boat; tour a dockside processing facility, and spend time learning techniques to evaluate the taste, texture and appearance of fresh oysters.

This year’s session will also feature presentations on: Shellfish as Food, What you need to know About Shellfish Resources, and Oyster Harvesting & Handling.

Oyster school will also discuss new advances in Post Harvest processing methods.

The program is coordinated through the University of Florida Extension Program along with the Franklin County Oyster Seafood Task Force, the Franklin County Seafood Workers’ Association and the Apalachicola Bay Oyster Dealers’ Association.
